Like most of Cook’s Country cookbooks, One-Pan Wonders is unparalleled among the countless cookbooks that appear in an unending stream. A large collection of rather original recipes is presented in this volume, all with one thing in common: they use a single cooking vessel. The recipes are given in six chapters according to the cooking container being used: skillet, sheet pan, Dutch oven, casserole, roasting pan, and slow cooker. The recipes are not hard but certainly don’t target beginner cooks (who would be intimidated by the long list of ingredients in most recipes). Each recipe gives total time to prepare and cook the dish, and these are reasonable for the average home cook. Icons indicate those that take less than an hour for weekday cooking. The ingredients are readily available, and the recipe layout is excellent, with cook’s convenience in mind. The illustrations are beautiful, and the occasional illustrated tips are helpful. The head notes are exceptional, explaining in great detail why that recipe works. Recipes range from familiar (beef pot roast, mac and cheese) to exotic (shakshuka, Korean beef, and kimchi stir-fry). This cookbook will be heavily used in most kitchens; too bad it’s not in hardback. The index, unfortunately, is not well cross-referenced.
