Instant Pot is a brand name of an electric digital pressure cooker. Megan Gilmore did an admirable job creating and altering recipes to work with this pressure cooker. If you already own a traditional stove-top pressure cooker, keep it. The recipes will work well with it. You just adjust to your non-digital version over the stove top. In fact, the digital versions are prone to problems, as all digital equipment are, but your stove-top model is problem-free forever. In The Fresh & Healthy Instant Pot Cookbook, Gilmore’s purpose is to provide optimum nutrition, flavor, and speed in her seventy-five recipes. Not all recipes save time; in fact, the very first one, cooking hard-boiled eggs, takes longer and is far more complicated than traditionally cooking in a pot on the stove top. Gilmore starts with pantry ingredients and substitutions, a good introduction. The recipes are easy to follow and well written but anything but instant. She gives prep time, cook time, time to pressurize, and release time; for many cooks, this is too much complication and too time consuming. Each recipe is illustrated, with a convenient layout accompanied by nutritional information. The recipes are simple, so even beginner cooks can follow them.
